Five-Spice Beef & Broccoli Stir-Fry

Everything has to be prepped before the pan gets hot — this isn't a recipe you can pause halfway to slice ginger. Do the mise en place, then the actual cooking is under ten minutes. Doesn't hold well past same-night eating; the beef toughens on reheat, so this one's for tonight, not the fridge.

Toss the sliced beef with 1 tablespoon of the soy sauce and the cornflour. Let it sit while you prep the broccoli. This is what gives the beef its velvet texture, so don't skip it.

Mix the remaining soy sauce, oyster sauce, and five-spice in a small bowl. Keep it next to the stove: once this starts, there's no pause to go looking for ingredients.

Heat a wok or large frying pan over high heat until it's actually smoking. Add half the oil, then the beef in a single layer. Leave it 60 seconds before touching it, then stir-fry 90 seconds total until just browned. Remove to a plate.
